Whole wheat garlic bread from scratch is the best homemade appetizer to beat the lockdown blues. Stuffed garlic bread to pair with any Italian meal. It is a delicious side dish. It is healthy as i used whole wheat flour. I have used baking soda and baking powder in this recipe but you can also use dry yeast instead. Don't forget to add sugar to yeast and warm milk. Sugar in Yeast helps in fermentation process.
Ingredients
- Baking powder - 1 tsp
- Baking soda - 1/2tsp
- Curd - 1/2 cup
- Whole wheat flour - 1.5 cup
- Salt - 1tsp
- Sugar - 1tsp
- Butter(unsalted) - 1/3 cup
- Garlic - 6 or 7 clogs
- Chili flakes
- Piri-Piri
- Oregano
- Pudina leaves (powdered)
- Capsicum
- Corns
- Spring onion ( Green part)
- Mozzarella cheese
- Processed cheese
Procedure:

| Assemble all ingredients |

| Take 1.5 cup whoile wheat flour, baking powder, baking soda and 1/2 cup curd |

| add 1 tsp sugar and 1 tsp salt ( or according to taste) |

| Start kneading by adding curd gradually |

| Slowly add water 1/8 cup at a time but do not exceed. Mix until the dough comes together. |

| Grease the dough with cooking oil. |

| It will look something like this. |

| Transfer it in the oiled bowl and leave for fermentation. |

| Cover the bowl with kitchen towel or plate/ Leave it until it has doubled in size. (about 2 hours or more depending on you place's weather conditions.) |

| While the dough rises, chop the garlic. |

| Add about 30 g of butter in 1 tsp of oilve oil |
![]() |
| Add chopped garlic and heat it to get garlic butter. |

| Post fermentation, the dough has doubled in size. |

| Grease the tray with Garlic butter. |
![]() |
| Tip the dough into a floured bowl |
![]() |
| Now smoothen it by rubbing it with flour. |

| Cutit into two equal sized pieces |

| Each can be used to make Garlic bread. I will be making one and keeping one aside. |

| Place butter paper over the tray and grease it as well. |

| Flatten it with a rolling pin |

| Place it in the tray. |

| Pour garlic butter |

| Spread it equally over the dough |

| Stuff frozen corns, tomato skin and capsicum on it. |

| Add cheese according to your taste. |

| A powder made out of dry pudina leaves, coriander leaves, piri-piri. |

| Sprinkle it over the stuffing with oregano. |

| Fold it into half and press it at the corners. Keep the cheese away from corners so that it doesn't melt and leak out. |

| Sprinkle some oregano over it. |

| Grease it with garlic oil. Preheat the oven. |

| Remove the bread from oven. |

| Grease it with butter again. |

| Sprinkle chili flakes and serve. |
