Mah Di Dal


We are all facing a lot of problems due to the COVID outbreak. Most of us are living with their families and are at ease but this post is dedicated to those people who could not get back home. This is a crucial time for independent people facing difficulties in preparing their own meal. This is a very easy step by step recipe for Mah ki Dal. It will revive your taste buds and set aside your craving for Ghar ka Khana.
NOTE: 

  1. You must not confuse Mah ki Dal with Dal Makhni as Maa ki Dak or Kali dal is made from Urad dal only. It is not a heavy dish as it has no extra cream or butter added to it whereas, Dal Makhni is made from a mix of whole urad dal, kidney beans (rajma). It is a heavy dish as it is made with butter and cream (Makhan). 
  2. The taste of pressure cooked Maa ki Dal is not compromised as it tastes the same as the traditional style Maa ki Dal, which is simmered overnight to get the unique flavour. Maa ki dal tastes best with Paranthas, Jeera rice, Butter naan and Lachcha Pranthas.

INGREDIENTS

  • Black Urad dal - 1 cup
  • Onions - 2
  • Tomato(pureed)-2 mediam
  • Garlic cloves - 15 to 20
  • Ginger (adrak) - 1 inch
  • Green chili - 4 or 5
  • Red chili - 1/2 tsp
  • Kashmiri Red chilli-1 tablespoon
  • Dry Red chili - 2 
  • Salt-as per taste
  • Desi ghee-1 tablespoon
  • Cumin Seeds (Jeera) - 1 tsp
  • Coriander  powder - 1/2 tsp 
  • Garam Masala-1/4 tsp
  • Coriander leaves for garnishing

PROCEDURE

Take 1 cup black urad dal. Rinse it in water for 3 times and soak it overnight.

Later drain the soaked dal. In a cooker, add soaked dal with 4 cuos of water and 1/2 tsp salt.
Pressure cook it for 20 minutes (or until dal becomes soft)

Assemble vegetables for tadka.

In a pan, warm desi ghee and add cumin seeds and dry red chilis.

Now add garlic and saute.

Now add ginger 

Add onion and saute it till they turn slightly brown.

Add salt as per taste and green chili.

Add tomato puree in golden brown sauted onions.

When masala leaves oil, it is ready.

Now add dal. and cook it.

Add garam masala and coriander powder.

Now add jeera powder.

Garnish with coriander.

It is now ready to be served.
