Fruity Vanilla Cake (with icing)


This is a delicious fruity eggless vanilla cake with whipped cream. Any occasion or celebration feels incomplete without a cake, and such a cake can uplift anybody's mood. In this time when everyone is at home, you can make it for your loved ones just to surprise them. I had uploaded the recipe for vanilla cake earlier and this is an upgraded version ( with whipped cream) of it. My motive behind this has always been to share with you, the easiest and the simplest recipes. 


Ingredients:

For cake: 

  • Maida - 1.5 cup
  • Melted butter - 3 tablespoon
  • Sugar -  50 g
  • Vegetable Oil - 3 tablespoon
  • Curd - 1/3 cup
  • Condensed Milk - 6 tbsp
  • Baking powder - 1 teaspoon
  • Baking soda - 1/2 teaspoon
  • Vanilla Essence - 1 tsp

For Whipped cream:

  • Whipped cream - 1 cup 
  • Vanilla essence - 1 tsp

Procedure:

Assemble all ingredients.

In a medium bowl, firstly sieve the flour, baking powder and baking soda.

Now add sugar

Add curd and whisk it.

Add vegetable oil.

Now add vanilla essence.

Add condensed milk and half a cup of milk as well.

Mix well.
Grease the mould and fix butter paper as shown. Meanwhile preheat the oven for 10 mins at 180 degrees.
Pour the batter into mould and bake it for 35-40 minutes until a toothpick inserted comes out clean.

Cool it for a few minutes.

Slice the cake into half horizontally and add sugar syrup and whipped cream layer.

Whisk whipped cream until it is ready. It should not fall when you pick up the whisk. It must stick.

Put star nozzle in the piping bag.

Fill the piping bag with whipped cream.

It looks somewhat like this.
 
Carefully cut its nozzle side such that the whipped cream doesn't leak and cream only comes through the nozzle.

Add a layer of whipped cream in the horizontally cut half of the cake.

You can also add different colours to the whipped cream and create beautiful designs over the cake.
I have decorated it with some fresh fruits to make it look even more appealing.
