Sabudana khichadi is often made during the fasting season in India. It is usually flavored with curry leaves, green chillis and peanuts. During fast using of lots of spices are prohibited to be eaten.I have used red chili powder, green chilis, sendha namak, potato, peanuts and curry leaves. You can also add ginger, cumin seeds and coriander.
While making sabudana khichdi people mostly face the problem that the sabudana pearls clump together. I have mentioned some tips for perfect non-stick sabudana khichdi.
- For best results, Soak sabudana overnight
- Rinse sabudana until water turns clear to get rid of the starch
- Always use 1:0.5 ratio of sabudana and water respectively. The pearls should be submerged in water.
- In the morning, check if the sabudana has been properly soaked by pressing a pearl between your thumb and index finger.
- You should not overcook sabudana. You should cook only until most of the pearls become translucent. If you keep cooking for a long time, it will stick together.
Ingredients:
- Sabudana - 1 cup
- Water - 1/2 cup
- Red chili powder - 1/4 teaspoon
- Raw peanuts - 2 tablespoon
- Green chili (chopped) - 2
- Curry leaves - 6 or 7
- Sendha namak - according to taste
- Desi ghee - 1 tablespoon
Procedure:

Take 1 cup sabudana |
 |
Rinse until water turns clear. This is important to get rid of all the starch |

Add half cup of water |
 |
Keep sabudana submerged in water. |
 |
Take a pan .Heat it and roast raw peanuts in it on low flame. |
 |
Rub peanuts to remove their skin. |
 |
Gather them |
 |
Crush peanuts to get a powder. (do not make paste) |
 |
Take ghee in a pan. Add curry leaves. |
 |
Add green chilis |
 |
Cut potatoes |
 |
Add diced potato in pan |
 |
Add red chili powder and a pinch of sendha namak, Mix it well |
 |
Add some roasted peanuts. |
 |
Add crushed peanuts and sendha namak to soaked sabudana |
 |
Mix it with hands. |
 |
Put this sabudana in the pan |
 |
Cook it for 1 minute while stirring |
 |
Cook on low flame for a few minutes, until most of the sabudana becomes translucent |
 |
Ready to be served |
