Manchurian


A recipe from Indo - Chinese cuisine that we all are very fond of. I have always loved to prepare Chinese food at home. Whenever my kids did something appreciable since. I used to make Chinese for them as a token of appreciation.

Ingredients: ( 1 cup = 250ml)

  • All purpose flour - 1/2 cup
  • Corn Flour - 2 tablespoon
  • Salt - 1/2 teaspoon (as per taste)
  • Kashmiri red chili - 1/2 teaspoon
  • Green chili - 2 or 3
  • Cauliflower (finely chopped) - 1/2 cup
  • Carrot (grated) - 1/2 cup
  • Capsicum (finely chopped) -1/4 cup
  • Beans ( finely chopped) - 1/4 cup
  • Oil (for frying) - as required

For gravy:

  • Onions (finely chopped) -1
  • Capsicum (finely chopped) - 1
  • Ginger (finely chopped) - 1 tablespoon
  • Green chili -2 or 3
  • Soya sauce- 1/2 tablespoon
  • Schezwan sauce - 1 teaspoon
  • Green chili sauce - 1/2 tablespoon
  • Apple cider vinegar - 1 teaspoon
  • Vegetable stock / Water - 2 cup
  • Black pepper powder - 1/2 teaspoon
  • Salt - as per taste
  • Spring onion greens - for garnishing

Procedure:

Finely chop all vegetables. 
You can also add green cabbage instead of cauliflower.

Take maida and corn flour in a bowl.

Add dry masalas mentioned in ingredients.

Now add all vegetables and little bit oil to mix. 

Kneed like dough.

Make balls and keep aside.

Heat oil for deep frying in a kadahi.

Fry manchurian balls on medium flame.

Take oil in a non stick pan.

Chop onions and capsicum.

Add onions.

Add ginger, red chili powder, green chili.

Add capsicum.

Add schezwan sauce, green chili paste, apple cider vinegar and soya sauce.

Saute it well

Add water or stock.

Add salt as per taste.

Continue to stir . Let it boil

Simmer till the veg Manchurian sauce thickens. Add Manchurian balls.

Add Spring onion leaves.

Add garam masala.

Ready to serve.
