The Rakhi Special - IMARATI


Imarati is a famous sweet in India made with urad daal tastes amazingly delicious. It is a traditional food item, also known as Jhangri. The best thing about imarati is that it can be served at any temperature, (hot, medium or cold).
Friends, since RAKSHA BANDHAN is near, I came up with an Indian Sweet Recipe. In sweet shops, people use a specially stitched cloth with a hole in the center to pipe the batter for imartis. Since I dont have Imarti cloth , I have used my cake decorating piping bag fitted with nozzle for this. Do try this recipe. If u have difficulty understanding the pattern of moving your hands in this way, don't worry. Just practice on a plate before trying in the oil. Its not that difficult.

INGREDIENTS (1 cup=250 g)


  • Urad dal-1 cup
  • Sugar-2 cups
  • Water-1 cup+1/4 cup
  • Orange food color-1 pinch
  • Corn starch - 2 tablespoon
  • Cardamom Powder - 1/2 teaspoon
  • Oil/ghee (for frying) 

HOW TO MAKE IMARATI


Take 1 cup urad daal

Clean & wash daal;  soak in 3 cups of water for 4-5 hours. 

Drain it

Grind with 1/2 cup of water to a fine and thick batter.

In a non-stick pan, cook the sugar with water, stirring till the sugar dissolves. 

Add cardamom powder.

Add Rose essence and cook till the mixture attains one string consistency. Remove from heat and keep the syrup warm.

Add orange food color to the imarati mixture.

Add corn starch 

Mix well using hands for 4-5 minutes.

Take a piping bag and fix the nozzle to the top end.

to ease pouring into the piping bag, you can use a glass.

Pour the batter into a piping bag or an imarati cloth.

Pipe out the batter into the hot oil in two concentric circles in one direction,
followed by scallops in the opposite direction.

Deep fry till golden and crisp on both the sides.

Change direction using skewer.

Soak in the warm sugar syrup for 5 minutes.

Let them drain.

The best thing about imaritis - serve hot or cold; choice is yours.
