Mango Kesari Kheer ( Summer Dessert)


Mango Kesari Kheer, a rich mango dessert which is very easy to make and has few ingredients.It is made with reduced and thickened milk,rice,cardamom powder and mango puree. It is rich,smooth and naturally creamy. And when it is served cold, it is becomes one of those desserts everyone would love to have on a perfect Hot summer day.

INGREDIENTS:

  • Mango pulp (puree) - 1 cup
  • Milk - 1 litre
  • Basmati Rice - 1 tablespoon
  • Cardamom ( Elaichi) - 3/4 teaspoon
  • Sugar (as per taste)
  • Almonds - 1 tablespoon
  • Raisins - 1/4 cup
  • Saffron - 7-8 strands
  • Ripe mango slices ( as needed ) [ for garnish]

PROCEDURE: 

Wash mangoes properly.

Remove the skin of the mangoes.
 
Slice the mango and make mango puree.

Grind it to a smooth paste and refrigerate it.

In a heavy bottom non stick pan, heat milk on medium flame.

Add saffron to 4 tablespoon milk and mix it in the non stick pan.

While the milk is heating up, add the basmati rice to grinder.

Grind it coarsely.

Add rice powder to the warm milk.

Cook basmati rice powder in milk until rice is fully cooked.

Add cardamom powder to it.

Add sugar. Mix well.

Mix till sugar dissolve completely.

Turn off the flame. Cool the mixture to room temperature. 
Add mango puree to the mixture and mix well until combined.


Decorate it with ripe mango slices, almonds and raisins.
Refrigerate!
