Baingan Bharta is a classic Punjabi side dish . It is an easy to make recipe . In each house it is prepared differently. It is a lip smacking recipe for kids lunch box and elders for office lunch.Here i am sharing my way of doing it .Baingan also known as eggplant and aubergines are roasted directly over fire till it is charred.
You can add fresh peas while making the baingan bharta,though its not a must. Here is step by step recipe of Baingan Bharta.
INGREDIENTS
- Baingan(eggplant)-1 large
- Onion-2 medium sized (chopped)
- tomato-2medium sized (pureed)
- Garlic-ginger-1/2 tsp
- green chilli-4-5 (chopped)
- Turmeric powder-1/2 tsp
- Coriander powder-1/2 tsp
- Red chilli powder-1/4 tsp
- Cumin seeds-1/2 tsp
- Coriander leaves-1 tbsp (chopped)
- Salt - to taste
- Oil-2 table spoon
HOW TO MAKE BAINGAN BHARTA
Rinse the bangan in water.Dry it .Apply some oil all over the baingan.

Keep it on roasting on an open flame.Keep the baingan turning after 1-2 minutes on flame ,so that its evenly cooked. |

Remove the baingan .keep it in a plate till it cools down. |

Once cooled,peel the skin from the roasted baingan |

Chop the cooked baingan. |

In a kadai or pan heat oil..Season with cumin seeds and let it crackle.Add red chilli powder and turmeric powder. |

Now add green chilli and ginger-garlic paste. |

Add onions saute till translucent. |

Add pureed tomatoes.Mix well. |

Add chopped cooked baingan. |

Stir and mix the chopped baingan. |

Mix salt and coriander powder.cook it on law flame for five minutes.Saute well. |

Your baingan ka bharta is ready to be served. |
