Vegetable Hakka Noodles

Vegetable Hakka noodles is a popular Indo chinese dish. It is not only popular with kids but also with youngsters. You can find it anywhere in india very easily, whether it is a restaurant or a roadside chinese food corner. It is an absolute delight for all chinese food lovers. It can be served for starters as well as main course. To give a good aroma to hakka noodles, the entire sauting has to be done on a high flame. The authentic taste of hakka noddles come from preparing them in a chinese wok.. But most of us neither have the real chinese wok nor the large burner stoves. If you have a iron wok, do use it. It lends a good smoky aroma.

INGREDIENTS:

  • Hakka Noodles- 200 g
  • Garlic cloves (minced)- 2
  • Ginger (Juliennes) - 1 teaspoon
  • Capsicum (thinly sliced)- 1
  • Carrot (julienne) - 1
  • Mushroom Buttons (finely chopped)- 4
  • Green chilis (chopped) - 2
  • White Vinegar- 1 teaspoon
  • Soya sauce- 2 teaspoon
  • Oil - (1/2 teaspoon for coating noodles) + (2 teaspoon for stir frying) 
  • Salt (as per taste)
  • Black Pepper (as per taste)
  • Water- (enough to cook the noodles)
  • Tomato Ketchup- 1 tablespoon

How To Make Hakka Noodles:

Heat enough water in a pan with salt and a few drops of oil till it comes to a boil..

Add the Hakka noodles.

Cook it till 90 percent cooked (do not overboil)

Drain it.
Put it in cold water. (wash to remove excess starch)



Now drain it and add oil. Gently mix. Keep aside.

Assemble all the vegetables.

Take this much amount of ginger and garlic for the noodles.

Heat oil in a pan on medium flame. Add garlic.Saute it for a minute.

Now add ginger and saute it.

Add green chilis. Increase th eflame and stir fry for a minute.

Now add onions.

Add capsicum, carrots and mushrooms.

Stir fry all the veggies on high flame till they start getting slightly brown.

Add soya sauce and white vinegar together in it and stir.

Add tomato ketchup.

Add noodles and toss it well.

Add salt and black pepper. Stir fry for 2-3 minutes.
Sprinkle oregano over it. (you can garnish with chopped spring onion greens)



Serve Hakka Noodles plain or accompany it with veg manchurian.
