Malai Kulfi (Summer Dessert)


Kulfi recipe, a traditional Indian ice cream made with full fat milk. Homemade kulfi to beat the heat. Kulfi ,a rich frozen dessert that is made with reduced full cream milk and flavored with either cardamom or saffron.😊 Incredibly smooth and delicious! No artificial additives,No food colour. I made it with four ingredients.It is flavored with cardamom powder. 
Malai Kulfi recipe is made with full cream milk .First of all,rabri is made with milk. Rabri is a creamy thick preparation after milk has been reduced to its one-third. The process is slow cooking simmering of milk with continuous stirring. Kulfi made this way with rabri tastes too good and you can not compare it with the kulfi you get outside.It is loved by kids as well as adults.You can add chopped nuts like almond,cashew and pistachios. Do not crush the nuts in powder form. Chopped nuts give some nice texture to the kulfi. Here, I am using pistachios. You can go with your preferences.

INGREDIENTS:

  • Full cream milk : 1.5 litre
  • Granulated sugar : 1/3 cup
  • Green Cardamom powder 1/2 teaspoon
  • Condensed milk :6 teaspoon

HOW TO MAKE MALAI KULFI:


Take milk in a wide bottomed pan.

Bring it to a boil  on medium heat.Do stir frequently.Once it come to boil,make the heat to low flame.Let it cook with stirring occasionally.It reduces to almost 1/3 of its original quantity. Cook it on low flame for 25-30 minutes.

Add sugar.

Add condensed milk.

Mix well and simmer till sugar and condensed milk is melted. 

Add cardamom powder, 

Let it cool completely. It will get thicker as it cools. Pour it in ice-cream molds.

Cover it with aluminium foil. Keep it in freezer for 8 hours or overnight and set.

Once it is set and frozen, its time to serve. Insert ice-cream stick in it and take out from mold.
To remove from mold, dip it in warm water for 1-2 seconds only. It will come out very easily.
You can also garnish it with some chopped nuts or a chocolate dip.
