Sambar ( South Indian cuisine)


Sambar is a definite part of South Indian meals. Sometimes, they make it even more than once a day. A typical South Indian sambar recipe calls for lot of vegetables like bottle gourd, drumstick, eggplant, potatoes, onions and tomatoes. The choice of vegetables is based on a personal liking. Each vegetable has different flavour and taste. It is nutritious as well as tasty. It is so versatile that it can be taken with rice, idli, dosa,vada, upma .

INGREDIENTS

  • Toor dal-3/4 cup
  • Tamarind (Imli)-2 tablespoon(as per taste)
  • Drumsticks(cut into pieces)-2
  • Bottle gourd(lauki)(cubes)-1/2 cup
  • Carrot-2-3 (chopped)
  • Tomatoes-2 medium size
  • potatoes-1-2(chopped)
  • Egg plant-1 small(cubes)
  • Sesame Oil -1 tablespoon)
  • Curry leaves-6-7
  • Mustard seeds-1 teaspoon
  • Sambar powder-3 teaspoon
  • chilli powder -1teaspoon
  • Kashmiri lal mirch- 1 teaspoon
  • Asafoetida(hing)-2 pinches
  • Turmeric powder(haldi)-2 tablespoon
  • Coriander(dhania)-2tablespoon


HOW TO MAKE SAMBAR


wash the dal several times .

Take cooker add 3 cups of water.

Pressure cook for 2-3 whistles.

Allow the steam to escape before opening the lid. Blend the dal using a hand blender till it is smooth and keep aside.

Wash and chop all the desired vegetables.

Take a deep non-stick pan combine all vegetables(except tomatoes) with 4 cups of water  and cook on medium flame till the vegetables are soft. Keep aside.

Take hot water and add tamarind.Set aside to soak.

Assemble ingredients for tadka.

Take another pan. Add sesame oil and add mustard to hot oil.

Add cumin,after this add red chilli,meethi seeds,channa dal,urad dal.

Add curry leaves.

Add hing.

add haldi ,kashmiri red chilli,red chilli and salt.

Add cooked vegetables to the sambar and cook for 3-5 minutes.

Add sambar powder to it.

Squeeze up the tamarind and pour the tamarind water to the sambar..Filter the tamarind to remove unwanted particles.

Add coriander leaves.

Add the tadka to the hot sambar .Let the sambar  on low flame for 2-3 minutes for good aroma.

Your samber is ready. Serve it with rice, idli,dosa,vada or upma.
