Medu Vada is a traditional South Indian dish which can be served as a main course or as snack. This crispy deep fried snack is made from urad dal and a few basic spices. Most South Indian consider breakfast incomplete without Medu Vada. Whether they have idli, dosa, upma, they like to add a crispy, tasty and protein-rich urad dal vada to the platter. The process of making hotel style vadas at home is not difficult once you know the way to get the perfect consistency of batter.
Urad dal is high in Protein and calcium. It makes a great food to start our day. I consider it to be one of the best health foods that can nourish our body.
Medu vada is one of my favourite snack.I especially like it dunked in hot sambar with coconut chutney by the side.
If there is no sambar, then you can have Medu Vadas with coconut chutney or even with mint coriander chutnry or tomato sauce.

INGREDIENTS
(1 CUP=250ml)
- Urad dal -1 cup
- Curry leaves -8-10
- Cumin powder -1/2 teaspoon
- Black pepper powder -1/2 teaspoon
- Onion -1 small(finely chopped)
- Ginger -1 tablespoon(finely chopped)
- Green chilies -1 or 2(chopped)
- Salt to taste
- Oil for deep frying
- Eno -a pinch
- Water if needed to grind the batter -2 teaspoon
HOW TO MAKE MEDU VADA

Take 1 cup urad dal. |
 |
Clean ,wash and soak the urad dal in 3 cups of water for 4 hours. |

Drain and blend in a mixer to a smooth batter,adding little water. |
 |
Transfer batter into a bowl and beat it using your hand for 1-2 minutes in one direction.This process incorporates air which makes the vada light and fluffy. |

Add black pepper powder in it. |
 |
Add 1 teaspoon salt (or according to taste) to the mixer. |
 |
Add cumin powder to the batter. |
 |
Cut curry leaves,green chillies ,onion and ginger and add to the batter. |
 |
Heat oil in a kadhai. |
 |
Now add a pinch of Eno. |
 |
Mix well. |
 |
Wet your palm with water And grease with oil. |
 |
Take a portion of the mixture in your hand.Give it a round shape. |
 |
Make a whole in the center using your thumb. |
 |
Once the oil becomes hot,keep the flame to medium.Drop the vada in oil. |
 |
Deep fry the vada till both sides turn golder brown in colour. |
 |
Repeat with the remaining batter to make more medu vadas. |
 |
Can serve with Sambar |

Serve hot with coconut chutney and sambar. |
