Masala Dosa (Restaurant Style)

Masala Dosa is a South Indian dish.It tastes delicious and is  pretty easy to make .It is full of protein. Not only in south India but Masala Dosa is on the menu list of many north Indian restaurants too.For making dosa, batter has to be slightly thin.You can also use suji.Suji makes the dosa crisp.Channa dal is also added to make dosa crispy and it also gives nice golden brown colour.

INGREDIENTS FOR DOSA BATTER

  • Idli rice-1/2 cup
  • Whole urad dal-1/2 cup
  • Long grain rice-1/2 cup
  • Methi seeds-10-12
  • Channa dal-1/4 cup
  • Asafoetida-a pinch
  • Salt -1/2 teaspoon


INGREDIENTS FOR POTATO MASALA

  • Potato(boiled)-4 medium sized
  • Oil-2 tablespoon
  • Mustard seeds-1/2 teaspoon
  • Channa dal (soaked)-1 tablespoon
  • Onion-1 medium (thinly sliced)
  • Ginger(finely chopped)-1 inch
  • Green chillies(chopped)-1-2
  • Curry leaves-8-10
  • Turmeric powder-1/4 teaspoon
  • Water-1/2 cup
  • Cumin seeds-1/2 teaspoon
  • Salt according to taste


HOW TO MAKE MASALA DOSA


SOAKING INGREDIENTS FOR MASALA DOSA

Take 1/2 cup idli rice in a bowl.Rinse it a couple of times. Add3/4 cup water and soak the rice for 4 hours. Add methi dana to it.

Take 1/2 cup long grain rice .Rinse it a couple of times.Add 1 .5 cups of water.Cover it and soak for 4 hours.

Take 1/2 cup  whole urad daal and 1/4 cup channa dal..Rinse it a couple of time.Then add 1.5 cups water.Cover it and soak for 4 hours

Drain the both rice and  urad dal after 4 hours.Also reserve the water because it facilitates fermentation
.

GRINDING THE BATTER


Take the both rice, channa dal and urad dal in a grinder jar and add 1 cup of reserved water to it.

Grind it to smooth /fluffy batter.Take it out in a deep bowl.

Add 1/2 teaspoon salt to it.Cover bowl with lid and keep it in warm spot.Let the batter cool for 6 hours depending on the weather.

The batter should ferment and rise like this.

When you scrap the upper layer,you will see a frothy and bubbly batter.Add 1/2 cup water to it.

 MAKING POTATO MASALA


Heat a pan with 1 tbsp oil.Saute i/2 tsp cumin.3/4 tsp mustard seeds .

Add 1 tsp channa dal .When the dal turn golden add hing and ginger.

Now add curry leaves to it.

Add sliced onions.

Add green chillies, turmeric powder,salt as per taste

Add boiled potatoes to it.Saute for some time.

Add 1/2 cup water .Saute on low flame.

Stir occasionly keep it on flame for 2-3 minutes.Potato masala is ready.Keep aside.

MAKING MASALA DOSA


Heat an iron tawa on medium flame.pour some oil in it.

lightly stir the batter,spread some batter on the tawa.

Cook the dosa on medium flame.

Sprinkle some oil on the top and the edges.

Cook the dosa till its base becomes golden.Flip and cook other side.

Place a portion of potato masala on the dosa.fold it .

Serve crispy restaurant style masala dosa hot with coconut chutney and sambar.
