Methi Pulao (Healthy Rice Dish)

     If you want to eat something light in winter then methi pulao is the best option. Methi pulao is nutricious and tasty. The flavors of whole masalas, fresh herbs and the beautiful fragrance of basmati rice, is truly a blissful meal.
     I love green vegetables and make it a point to prepare greens at least 4 days a week as i strongly believe that we are what we eat. Here ,we have methi season now and we get fresh greens at our doorstep. It is tasty and a great way to include greens in our diet.
     I usually make this methi pulao for my Kid's Lunch Box, my little boy is growing up to be a foodie with specific likings. He likes variety.He really liked it. Do try this and you will love it.

INGREDIENTS

  • Desi  Ghee-1 tablespoon (clarified butter)
  • Paneer-100 gm (cottage cheese)
  • Cumin seeds(jeera) 1 teaspoon
  • Bay leaf(tej patta)-1 leaf
  • Black pepper-1/2 teaspoon
  • Star anise-1
  • Cinnamon stick-1inch(dalchini)
  • Cloves(lavong)-5
  • Onion-1(thinly sliced)
  • green chilli-1 (slit)
  • Turmeric powder (haldi)-1/4 teaspoon
  • Ginger paste-1 teaspoon
  • Methi leaves (fenugreek leaves)-250 gm
  • Kashmiri red chilli-1/2 teaspoon
  • Basmati rice (soaked 30 minutes)-1 cup
  • Peas (matar fresh)-1/4 cup
  • Water-2&1/2 cups
  • Salt acc. to taste

HOW TO MAKE METHI PULAO

                         
Separate the leaves from the stem.


Methi leaves has bitter taste.We like this methi flavor so i use the leaves as such. If you don't like the bitter taste ,sprinkle salt  and soak for a while .

Wash it well.

Drain out the methi  leaves.Keep it aside.

Take a pan .Heat ghee in it.

Roast paneer pieces on low flame.

Roast paneer till they turn golden brown. Keep aside.

Now further in same kadai  add cumin,bay leaf, star anise,black pepper,1 inch cinnamon stick and  cloves.

Now add 1/4 teaspoon haldi powder.Saute well.

Add onion ,green chilli and ginger garlic paste,saute well.

Further saute 250 gm methi leaves till they shrink in size.

Now add 1/2 teaspoon kash miri red chilli powder.Saute for a minute.

Heat a pan , add 2&1/2 cup water and add green peas in it.Heat it till warm.Keep aside.

Now add salt according to taste.

Add basmati rice.

Saute for a minute without breaking rice grains.

Now add peas with water.

Cover with a lid and cook on low flame for 5 minutes or till rice gets cooked well completely.

Serve warm methi pulao with lemon and raita.
