This Gobhi Gajar ka achar (pickle) is a specialty of punjabi cuisine. It is a must have pickle during winter season. This recipe is easy to make. The main ingredients are cauliflower and carrots. I took both ingredients in equal proportion but you can take it according to your choice. Before I start the recipe, I want to clear few things. Firstly, dry the vegetables in sunlight for atleast five to six hours so that extra moisture from vegetables can be removed. Secondly, the jaggery should be melted in vinegar. - Cauliflower-1 kg (washed and cut)
- Carrots-1 kg (washed and cut)
- Garlic cloves-40 (crushed)
- Garlic-3/4cup(crushed)
SPICES
- Salt-1/4 cup
- Red chilli powder-2-3 tablespoon
- Black cardamom-5-7 pieces
- Cinnamon powder-2 small sticks
- Cloves-8-10 pieces
- Termeric-2 tablespoon
- Black pepper powder-2 teaspoon
- Crushed rai-1/2 cup
- Cumin seeds-1/4 tablespoon
- Jaggery-1 cup (grated)
- Vinegar-3/4 cup
- Mustard oil-2 cup
