Gobhi Gajar Pickle (Playing with Spices)


This Gobhi Gajar ka achar (pickle) is a specialty of punjabi cuisine. It is a must have pickle during winter season. This recipe is easy to make. The main ingredients are cauliflower and carrots. I took both ingredients in equal proportion but you can take it according to your choice. Before I start the recipe, I want to clear few things. Firstly, dry the vegetables in sunlight for atleast five to six hours so that extra moisture from vegetables can be removed. Secondly, the jaggery should be melted in vinegar. Thirdly, don,t overcook it . It tastes best when it is fresh. Here is the delicious seasonal gobhi gajar achar recipe.

INGREDIENTS

VEGETABLES

  • Cauliflower-1 kg (washed and cut)
  • Carrots-1 kg (washed and cut)
  • Garlic cloves-40 (crushed)
  • Garlic-3/4cup(crushed)

SPICES

  • Salt-1/4 cup
  • Red chilli powder-2-3 tablespoon
  • Black cardamom-5-7 pieces
  • Cinnamon powder-2 small sticks
  • Cloves-8-10 pieces
  • Termeric-2 tablespoon
  • Black pepper powder-2 teaspoon
  • Crushed rai-1/2 cup
  • Cumin seeds-1/4 tablespoon
  • Jaggery-1 cup (grated)
  • Vinegar-3/4 cup
  • Mustard oil-2 cup 

HOW TO MAKE GOBHI GAJAR KA ACHAR:

Wash and cut cauliflower.

Wash carrots and cut it.

Boil water in a pan. Add 1 teaspoon salt.

Add cauliflower and carrot in hot water for 2 minutes.

Use a spoon to transfer the veggies from hot water.

Strain the veggies.

Spread the vegitables on paper towel.let it dry for 5-6 hours.
Assemble the spices.

Grind them in a grinder.

place rai  in a  stone bowl and pound it.

Heat mustard oil in a pan.

Add turmeric in it.

Now add garlic paste and cook until light brown in colour.

Add ginger in it.

Cook it until brown.

Combine vinegar and jaggery in a pan.Bring it to boil until it form a thick consistency.

Now add dried veggies in it.

Mix it for 1 minute.

Turn off the gas.Add all pounded spices in it.

Mix it well

Let the vinegar and jaggery mix cool for some time.

Pour it in the mixture of veggies.

Gobhi gajar achar is ready.
