Combination of Jaggery ,banana and whole wheat is a match made in HEAVEN! This Banana jaggery Cake is very simple to bake and the best kind of comfort food. Just be a little careful while mixing the batter because over-beaten batter spoils the whole texture of the Cake.Also make sure all the ingredients are in room temperature. This is very important factor that can totally mess up your cake.
My only goal through this recipe is to help people find batter substitute in their regular baking and show them how healthy dessert can be very tasty.
INGREDIENTS
- Banana-3 (mashed)
- Whole wheat flour-1&1/2 cup
- Baking powder-1 teaspoon
- Baking soda-1/2 teaspoon
- Salt-1 teaspoon
- Olive oil-1/2 cup
- Jaggery powder-1 cup
- Milk-1/4 cup
- Almond milk-1/2 cup
- Almond flakes for garnish

| Preheat the oven to 180 degree c and grease a cake tin. |

| In a bowl,whisk together flour, baking powder,baking soda and salt and keep aside. |

| In another bowl, add jaggery and oil until light and fluffy. |

| Add milk and beat well. |

| Add mashed bananas and mix well. |

| Fold in flour mixture . |

| Pour the batter into cake tin . |

| Sprinkle the Almond flakes over it. |
