Christmas Cake ( This Year's Last Post)


This cake was a last minute request from my very close friend. Since Christmas eve is here we have an early post for you. Christmas is round the corner; Fresh cranberries are on the shelf. I decide to make a dry fruit cake. Traditionally, this recipe is made by soaking dry fruits in Rum (alcohol) but keeping in mind about my audience, I have made it in a healthier and beneficial way. I have soaked the Dry Fruits in Orange Juice.

INGREDIENTS:

  • Whole wheat flour - 1.5 cup
  • Dried Cranberry - 1/2 cup
  • Cocoa Powder - 2 tablespoon
  • Almonds (chopped) - 1/4 cup
  • Apricots (chopped) - 1/4 cup
  • Cashew (chopped ) - 1/4 cup
  • Fresh Orange Juice - 1 cup
  • Orange zest - 1 teaspoon
  • Granulated Sugar - 3/4 cup
  • Melted Butter - 1/2 cup
  • Cinnamon Powder - 1/2 tablespoon
  • Nutmeg (grated) - 1/4 tablespoon
  • Salt - 1/4 teaspoon
  • Vinegar - 1 teaspoon
  • Milk - 3/4 cup
  • Hot water - 1/2 cup
  • Baking powder -  1 teaspoon
  • Baking Soda - 1/2 teaspoon

PROCEDURE:


Chop all the dry fruits.

Take 1 teaspoon Orange zest.

Soak all the dry fruits in 1 cup Orange juice (approx 120 ml) and add orange zest in it.

Add Cranberries into the mixture. Cover it and keep aside for an hour. 

Take a bowl. Seive and put baking powder, baking soda, salt, whole wheat flour, nutmeg powder, cinnamon powder.

Now add sugar.

Add 1/2 cup butter.

Add cocoa powder in it (2 tablespoon)

Now add hot water.

Add vinegar and mix well.

Add Milk and mix well.

Add all soaked dry fruits into it and mix it with spatula.

Batter is ready. Pour it in a baking tin.

Bake it in oven (180 degrees) for 30-35 minutes. Or until the toothpick inserted comes out clean.

Cake is ready. let it cool. Decorate the top of the cake with dry fruits.

Make it as appealing as you can for the loved ones.

Either cut it in slices.

Or just serve it as it is.
