Chocolate Mud Cake (The Brownie Fudge)


Simple egg less Chocolate Mud Cake really no cracks,no lumps,silky smooth, moist and glossy surface. In simple terms it's a fudge brownie type cake. One bite and you will fall in love with super fudge cake!

INGREDIENTS

  • All purpose flour- 1.5cup
  • Cocoa powder- 2 tablespoons
  • Baking powder- 1 teaspoon
  • Salt- one pinch
  • Sugar- 3/4cup
  • Sunflower oil- 1/3cup
  • Vanilla essence- 1 teaspoon
  • Curd-1/3 cup
  • Warm coffee- 1/3 cup(1/2teaspoon coffee in 1/3 cup hot water)
  • Red food colour-5-6 drops
NOTE: 1 CUP=250ml
  1. Whenever you are mixing for the cake with hand or hand mixes, you should mix in one direction only to get soft cakes.
  2. Make sure all the ingredients are at room temperature before you start mixing.
  3. Make sure your oven settings are correct else cakes wont't come proper.

HOW TO MAKE CHOCOLATE MUD CAKE



Preheat oven to 175 degrees. Line a heart shaped baking pan with butter paper and keep it ready.
                                                 
In a medium bowl, add all purpose flour, cocoa powder, baking powder and salt; Set aside.

In a cup take 1/3 warm water add 1/2 teaspoon coffee and red food colour.

In a large bowl take sugar and oil. Mix with a spatula.

Add curd and mix well.

Add vanilla essence.

Mix well.

Add warm coffee and red food colour mix..Now add dry ingredients to it, about 2 tablespoon at a time mixing after each addition, just until combined.

Add the batter on low /medium speed.

Batter is ready; pour the batter in the baking pan (2/3 maximum ). Bake for 15-20 minutes, or until a toothpick comes out clean.

Take the baking pan out and let it cool completely. Serve and enjoy!
