Paneer Tikka ( the Smoky Hot recipe )


Paneer Tikka is a North Indian cuisine. This recipe is marinated paneer (cottage cheese cubes) , arranged on skewers and grilled or baked in the oven . Specifically the recipe is called the Tandoori Paneer Tikka , as the paneer is cooked in the tandoor .If you do not have oven or grill , it restricts you from making paneer tikka at home . I made it easy for you to make it at home it is better and healthier than the paneer tikka served in the restaurants . Paneer tikka is usually served as a starter . 

 INGREDIENTS

  • paneer (cottage cheese) - 250 grams
  • capsicum - 1 medium sized
  • tomato - 1
FOR PANEER TIKKA MARINATION
  • besan (gram flour) 2 tablespoon
  • hung curd 1/2 cup
  • ginger 1 pinch
  • garlic 4 or 5 pods
  • ajwain (carom seeds) 1 teaspoon
  • kashmiri red chilli powder 1 or 2 teaspoon
  • haldi (turmeric powder ) half teaspoon
  • jeera (cumin seeds) 1 teaspoon
  • dhania powder (coriander powder) 1 teaspoon
  • green coriander (1 bowl)
  • garam masala powder 1/2 teaspoon
  • chaat masala 1 teaspoon
  • amchoor (mango powder ) 1 teaspoon
  • black pepper 1/2 teaspoon
  • lemon juice 1/2 tablespoon
  • fresh cream 2 teaspoon
  • oil 1 tablespoon
  • black salt 1/2 teaspoon
  • kasuri methi 1/2 teaspoon
  • kaju(cashew nuts) 8 to 10 pieces
  • salt as per taste

HOW TO MAKE PANEER TIKKA :




Take oil in a pan. Add jeera, ajwain and green chili.

Now add Cashew nuts.

Add besan. 

Saute it properly for 1 minute.

Add Coriander leaves and switch off the flame. let it cool down.

Put the batter in grater (mixcy). Add garlic, ginger 

Add kasuri methi.

Add 1/2 cup of hung curd. Grind it and make a smooth paste.

Pour paste in a bowl and add haldi, dhania powder, chaat masala powder,
salt, garam masala powder, lemon juice.

Add fresh cream into it.

Pour some oil on it and mix it thoroughly.

Add square shaped pieces of cottage cheese (paneer) for marination.

Cut vegetables as shown.


Add vegetables to the paste for marination. Marinate for minimum 1 hour in the refrigerator.

Place the marinated Paneer cubes and vegetables on the skewer.

Arrange them alternately as shown. Fry it on pan.


Keep turning the sides until they turn golden.

 To add some Smokey Charcoal flavor to it:

Put a grill on your stove.


Grill the half fried paneer. (low flame)

Put some oil on it with brush.


Arrange it on a plate. Sprinkle some chaat masala and lemon juice on paneer tikka.

Serve the yummy Paneer tikka with mint chutney.

 Alternate way of preparing Paneer Tikka ( not smoky)


Put the half fried paneer tikka in the griller.

Grill it and add some chaat masala over it.

Ready to be served.
