Paneer Kathi Roll (Wrapped Happiness)


Paneer Kathi Roll is an Indian Street food.It is nothing but tongue tickling spicy paneer tikka wrapped in tortilla ( like chapati) it is a healthy stomach filling food that can simply liven up your taste buds .

Making paneer kathi roll at home involves 3 steps
1. make spicy tikka for filling
2. make chapati for the wrap
3. combine both into a stuffed wrap

Super delicious paneer kathi roll which not only taste fantastic but is super easy to make.
This recipe is great to put in your kid's lunch box . So good and healthy .

INGREDIENTS

FOR STUFFING:

  • 150 grams cheese(paneer) cubes
  • 1/2 cup green capsicum(cut into diced )
  • 1/3 tomato (cut into diced)
  • 1/3 cup onion(cut into diced)
  • 1/4 cup thick curd
  • 1/2 teaspoon ginger garlic paste
  • 2 teaspoon gram flour
  • 1/2 teaspoon red chilly powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon kasuri methi(dried fenugreek leaves)
  • 2 teaspoon coriander leaves
  • 1/2 teaspoon coriander powder
  • 1/4 teasooon chaat masala powder
  • 1 tablespoon oil
  • salt as per taste
  • 1 teaspoon lemon juice

 FOR CHAPATI WRAP:

  • 1/2 cup whole wheat flour
  • 1/2 cup maida
  • 2 teaspoons for shallow frying oil 
  • milk or water
  • salt-a pinch
  • 1/4 cup coriander mint chutney (for serving)
  • 1 onion,thinly sliced (for serving)

DIRECTION FOR PANEER TIKKA STUFFING

Cut the veggies into squares.

Take thick curd, gram flour (roasted in oil), ginger-garlic paste, red chilli powder, garam masala powder,kasuri methi ,coriander leaves,coriander powder,chaat masala powder and salt in large bowl.

Cut paneer into cubes and add it in marinade. Also add capsicum,tomato and onion.

Mix gently to coat them with marinade.Cover with them with a plastic wrap and place in the refrigerater for around 25-30 minutes.

Heat 1 tablespoon oil in a non-stick pan.Saute marinated capsicum paneer,onion and tomato for 5-7 minutes over medium flame.

 

Turn off the flame,add lemon juice and mix well. Paneer Tikka,which will be used for stuffing, is ready.

  DIRECTIONS FOR CHAPATI WRAP

Take whole-wheat flour,maida,2 teaspoons oil andsalt in a bowl.Add milk or water as needed and knead smooth dough similar to chapati dough.Cover it with a clean muslin cloth and keep aside for 10-15 minutes.


Divide dough into 4-5 equal portions and give them a shape like a ball.

 

Roll out using rolling pin like roti.

 

Spread 1/2 teaspoon oil evenly on each side and flip and roast both sides of chapati.Transfer into a plate.

  DIRECTIONS FOR PANEER KATHI ROLL

Prepare the mint coriander chutney.Cut onions into thin slices and sprinkle a little bit of  chaat masala powder over  it.


Take one chapati and spread 1-2 teaspoons green mint chutney evenly over it.


Put one portion of filling  in the center and spread it lengthwise.Add some sliced onion.  


Fold from one end

 

Now start rolling.

 

Done


Wrap the roll halfway with aluminium foil and serve with mint chutney .

 

Paneer tikka kathi roll is ready to eat.
You can even add cheese over the masala, roll it and just heat it on the tawa till the cheese melts.
